Directions
- Heat the oven to 350 degrees. Coat an 11x7-inch baking dish with non-stick cooking spray.
- Cook the noodles according to the package directions and drain. Place the noodles in a large bowl. Stir in 1 cup of the sour cream, cottage cheese and green onions.
- Meanwhile, cook the ground beef in a large skillet over medium-high heat for 5 to 7 minutes or until thoroughly cooked and no longer pink in the center, stirring frequently.
- Stir in the tomatoes, salt and pepper. Simmer on medium heat for 10 minutes or until slightly thickened.
- Spoon half of the noodle mixture into the baking dish. Top with half of the hamburger mixture and half of the cheddar cheese. Repeat.
- Bake for 20 to 30 minutes or until the cheese is melted and the casserole is hot.
- Serve with dollops of the remaining sour cream.
