Ingredients

  • 6 cups assorted fresh vegetables, cut in large pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup Daisy Cottage Cheese
  • 1/2 cup Daisy Sour Cream
  • 2 tablespoons finely diced fresh chives
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon minced garlic

Ingredients

Directions

  1. Heat the oven to 425 degrees.
  2. Toss the vegetables with the olive oil, salt and pepper in a large bowl. Arrange in a single layer on a large rimmed baking sheet. Bake for 35 to 45 minutes or until lightly roasted and tender.
  3. Meanwhile, combine cottage cheese, sour cream, chives, dill, lemon peel, and garlic in a small bowl.
  4. Serve the vegetables warm or at room temperature, with the dipping sauce.
