Ingredients

  • 2 small sweet potatoes
  • 3/4 cup shredded seasoned chicken, warmed
  • 3/4 cup shredded cheese
  • 1/3 cup Pico de Gallo
  • 1/2 avocado, diced
  • 1/2 cup Daisy Sour Cream
  • 2 tablespoons chopped cilantro

Ingredients

Directions

  1. Pierce cleaned sweet potatoes all over with a fork. Wrap in damp paper towels and microwave on high for 5-7 minutes, or until tender.
  2. Carefully slice each sweet potato in half lengthwise.
  3. Top with warmed chicken and shredded cheese. If desired, microwave in 30 second intervals until cheese melts.
  4. Sprinkle with Pico de Gallo and avocado. Dollop with sour cream and sprinkle with cilantro.
