Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup sliced purple onion
- 1/2 cup chopped red bell pepper
- 3 cups sliced zucchini
- 1/2 cup frozen corn, thawed
- 15 ounce can black beans, drained and rinsed
- 8 6-inch corn tortillas
- 1/4 cup sliced green onion
- 3/4 cup Daisy Sour Cream
- 3 tablespoons chopped fresh cilantro
Ingredients

Directions
- Heat the oil in a large skillet over medium-high heat. Add the onion, bell peppers, zucchini, and corn until tender and light brown. Add the black beans and stir to combine.
- Heat or grill tortillas and top with vegetable mixture.
- Garnish with the green onion, sour cream and cilantro. Serve with grilled limes, if desired.
