Ingredients

  • 1/4 cup finely diced white onion
  • 1/4 cup finely chopped broccoli (frozen and thawed or raw)
  • 1/4 cup shredded carrot
  • 1/4 cup finely diced colorful bell peppers
  • 1/2 teaspoon minced garlic
  • 1 cup Daisy Cottage Cheese
  • 8 large egg whites
  • 1/8 teaspoon salt
  • 1/4 teaspoon cracked black pepper

  • 1/4 teaspoon cracked black pepper

Directions

  1. Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
  2. Mix onion, broccoli, carrot and garlic together. Divide into muffin tins.
  3. Blend cottage cheese, egg whites, salt, and pepper in a blender until smooth. Pour egg mixture over vegetables.
  4. Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
