Ingredients
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup sugar
- 1 tablespoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 cup Daisy Cottage Cheese
- 1 can canned pumpkin puree
- 1 cup milk
- 6 tablespoons butter, melted, divided
- 2 large eggs
- 2 teaspoons grated orange zest

Directions
- Whisk the all-purpose flour, whole wheat flour, sugar, pumpkin pie spice and baking powder in a large bowl.
- Whisk the cottage cheese, pumpkin, milk, 5 tablespoons of the butter, eggs and orange zest in medium bowl until blended.
- Stir the cottage cheese mixture into the flour mixture until moistened.
- Heat the waffle maker according to the manufacturer’s directions. Lightly brush with remaining 1 tablespoon melted butter. Pour 1/4-cup batter per waffle. Cook according to the manufacturer’s directions.
- Serve with your favorite toppers.
