Mix the chocolate wafer crumbs with melted butter and then set aside.
Puree the cottage cheese and vanilla in a food processor until completely smooth (approximately 1 minute).
Add chocolate chips to a microwave safe container, then microwave at 30 second intervals until just melted (approximately 1 ½ minutes).
Pour blended cottage cheese mixture into a medium mixing bowl and then use a rubber spatula to gently fold-in melted chocolate chips (make sure the chocolate is warm to achieve a uniform color).
Sprinkle 1 tablespoon of the chocolate wafer mixture into the bottom of a dessert jar.
Scoop ½ cup of cottage cheese cheesecake filling on top and smooth with the back of a spoon.
Sprinkle 1 more tablespoon of the chocolate wafer mixture on top, and then top with fresh raspberries.
Repeat process with remaining dessert jars. Chill for 2 hours and then serve.
