  • 8 ounces farfalle pasta
  • 1 cup broccoli florets
  • 1 1/2 cups chopped fresh baby spinach
  • 1 cup Daisy Cottage Cheese
  • 3/4 cup Cherry tomatoes, halved
  • 1/4 cup unsalted butter
  • 1 large garlic clove, minced
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon hot pepper sauce

Directions

  1. Heat the oven to 350 degrees. Coat an 11x7-inch baking dish with cooking spray.
  2. Cook the pasta according to the package directions, adding the broccoli during the last 3 minutes of cooking.
  3. Drain and place in a large bowl. Stir in the spinach, cottage cheese, and tomatoes.
  4. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the garlic; cook for 30 seconds or until fragrant.
  5. Whisk in the flour; cook for 30 seconds, stirring constantly. Whisk in the milk; bring to a boil, stirring frequently.
  6. Stir in 1 cup of the cheddar cheese and the hot pepper sauce; stir until the cheese is melted. Pour over the pasta mixture; stir to combine.
  7. Place in the baking dish; sprinkle with the remaining 1/2 cup cheddar cheese.
  8. Bake the casserole for 30 to 35 minutes or until the cheese is melted and the edges are bubbly. Let stand for 5 minutes before serving.
