Ingredients
- 9 inch prepared pie crust (pastry or gluten-free)
- 2 cups Daisy Cottage Cheese
- 2 large eggs
- 2 tablespoons cream cheese, softened
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon vanilla extract
- 2/3 cup raw sugar

- 2 tablespoons cream cheese, softened
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon vanilla extract
- 2/3 cup raw sugar
Directions
- Preheat the oven to 350 degrees.
- Place the cottage cheese, eggs, cream cheese, ginger, vanilla, sugar in a mixer and blend until smooth.
- Pour the filling into the prepared pie shell. Bake for 40 minutes.
- Cool to room temperature and then chill until ready to serve.
