Ingredients

  • 1/2 cup cooked, crumbled chorizo
  • 1/2 cup cooked, diced potatoes
  • 1/4 cup finely diced bell peppers
  • 1/4 cup finely diced red onion
  • 1 cup Daisy Cottage Cheese
  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Ingredients

  • 1/2 cup cooked, crumbled chorizo
  • 1/2 cup cooked, diced potatoes
  • 1/4 cup finely diced bell peppers
  • 1/4 cup finely diced red onion
  • 1 cup Daisy Cottage Cheese
  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Directions

  1. Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
  2. Mix chorizo, potatoes, bell peppers and onion. Divide into muffin tins.
  3. Blend cottage cheese, eggs, salt, and pepper in a blender until smooth. Pour egg mixture over chorizo mixture.
  4. Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
