Ingredients
- 1/2 cup cooked, crumbled chorizo
- 1/2 cup cooked, diced potatoes
- 1/4 cup finely diced bell peppers
- 1/4 cup finely diced red onion
- 1 cup Daisy Cottage Cheese
- 8 large eggs
- 1/4 teaspoon salt
- 1/2 teaspoon cracked black pepper

Directions
- Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
- Mix chorizo, potatoes, bell peppers and onion. Divide into muffin tins.
- Blend cottage cheese, eggs, salt, and pepper in a blender until smooth. Pour egg mixture over chorizo mixture.
- Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
