Ingredients
- 1/4 cup finely diced white onion
- 1/4 cup finely chopped broccoli (frozen and thawed or raw)
- 1/4 cup shredded carrot
- 1/4 cup finely diced colorful bell peppers
- 1/2 teaspoon minced garlic
- 1 cup Daisy Cottage Cheese
- 8 large egg whites
- 1/8 teaspoon salt
- 1/4 teaspoon cracked black pepper

- 1/2 teaspoon minced garlic
- 1 cup Daisy Cottage Cheese
- 8 large egg whites
- 1/8 teaspoon salt
- 1/4 teaspoon cracked black pepper
Directions
- Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
- Mix onion, broccoli, carrot and garlic together. Divide into muffin tins.
- Blend cottage cheese, egg whites, salt, and pepper in a blender until smooth. Pour egg mixture over vegetables.
- Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
