Directions
- Preheat oven to 300°F. Coat cupcake tin or silicone mold with nonstick cooking spray.
- Blend cottage cheese, eggs, salt, and pepper in a blender until smooth.
- Fill tins to brim with mixture. Top with pesto and swirl a few times with knife.
- Bake 25-28 minutes or golden brown and dry. Cool 5 minutes before unmolding and serving.
