Ingredients

  • 3/4 cup Daisy Cottage Cheese
  • 8 ounce can chunk pineapple in juice, drained and diced
  • 1/4 cup finely chopped red bell pepper
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon salt-free southwestern chipotle seasoning
  • 20 rye crisp whole grain crackers

Directions

  1. In a medium bowl, stir together the cottage cheese, drained pineapple, red bell pepper, cilantro and seasoning.
  2. Spread about 1 tablespoon cheese mixture on each cracker; serve immediately. The cheese spread can be covered and refrigerated up to 2 days before serving; stir before serving.
