Ingredients

  • 2 cups Daisy Cottage Cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1 cup chopped cucumber
  • 2 medium Roma tomatoes, seeded and chopped
  • 1/4 cup chopped red onion
  • 4 large lettuce leaves
  • 2 whole wheat pita bread, halved

Directions

  1. In a medium bowl, stir together the cottage cheese, cilantro, mint, lemon juice, cumin, paprika and cayenne pepper. Stir in the cucumber, tomatoes, and red onion.
  2. To serve, line the plates with the lettuce leaves. Spoon the cottage cheese salad onto the lettuce. Serve each plate with 1/2 piece of pita.
