Ingredients

  • 1 cup coconut flour
  • 3/4 cup Daisy Cottage Cheese
  • 1 cup peanut butter
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 2 tablespoons + 2 teaspoons coconut oil

  • 1 cup peanut butter
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 2 tablespoons + 2 teaspoons coconut oil

Directions

  1. Line an 8 x 8-inch pan with parchment paper.
  2. Add coconut flour, cottage cheese, peanut butter, and maple syrup to food processor bowl. Process until slightly coarse. Transfer to pan and press firmly. Freeze until firm (about 1 hour).
  3. Cut into bars.
  4. Melt chocolate chips with coconut oil in microwave in 30-second increments. Coat bars in chocolate. Refrigerate 15 minutes or until chocolate hardens.
