Ingredients

  • 1/3 cup finely chopped onion
  • 3 tablespoons red and green diced peppers
  • 1/2 cup sliced mushrooms
  • 2 tablespoons butter
  • 1 large egg, slightly beaten
  • 1 cup Daisy Sour Cream
  • 5 slices crisp, crumbled bacon
  • 1 cup finely shredded mild cheddar cheese
  • 1 1/2 cups finely shredded Swiss cheese
  • 1 dash salt & pepper
  • 2 unbaked pie crusts

Ingredients

Directions

  1. Preheat the oven to 350 degrees.
  2. In the microwave, sauté the onions, peppers, and mushrooms in butter for 1 1/2 minutes on high in a small bowl.
  3. Combine the egg, sour cream, bacon, cheeses, vegetables, salt and pepper; set aside.
  4. Roll out the two unbaked pie crusts. With a round cookie cutter, cut out circles of dough and line small mini-muffin tins (or a tart pans) sprayed with nonstick spray.
  5. Spoon the egg mixture into the pie crust lined mini-muffin tins. Bake for 20-25 minutes. Serve while hot.
