Ingredients
- 1/3 cup finely chopped onion
- 3 tablespoons red and green diced peppers
- 1/2 cup sliced mushrooms
- 2 tablespoons butter
- 1 large egg, slightly beaten
- 1 cup Daisy Sour Cream
- 5 slices crisp, crumbled bacon
- 1 cup finely shredded mild cheddar cheese
- 1 1/2 cups finely shredded Swiss cheese
- 1 dash salt & pepper
- 2 unbaked pie crusts
Ingredients

- 5 slices crisp, crumbled bacon
- 1 cup finely shredded mild cheddar cheese
- 1 1/2 cups finely shredded Swiss cheese
- 1 dash salt & pepper
- 2 unbaked pie crusts
Directions
- Preheat the oven to 350 degrees.
- In the microwave, sauté the onions, peppers, and mushrooms in butter for 1 1/2 minutes on high in a small bowl.
- Combine the egg, sour cream, bacon, cheeses, vegetables, salt and pepper; set aside.
- Roll out the two unbaked pie crusts. With a round cookie cutter, cut out circles of dough and line small mini-muffin tins (or a tart pans) sprayed with nonstick spray.
- Spoon the egg mixture into the pie crust lined mini-muffin tins. Bake for 20-25 minutes. Serve while hot.
