Ingredients

  • 2 cans 15 ounce cans unsalted corn, drained
  • 2 tablespoons unsalted butter
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/4 teaspoon salt
  • 2/3 cup mayonnaise
  • 2/3 cup Daisy Cottage Cheese
  • 2 teaspoons sugar, if desired
  • 1 cup shredded mozzarella
  • 2 tablespoons thinly sliced green onions

Ingredients

  • 2 cans 15 ounce cans unsalted corn, drained
  • 2 tablespoons unsalted butter
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/4 teaspoon salt
  • 2/3 cup mayonnaise
  • 2/3 cup Daisy Cottage Cheese
  • 2 teaspoons sugar, if desired
  • 1 cup shredded mozzarella
  • 2 tablespoons thinly sliced green onions

Directions

  1. Preheat oven to 400˚F. Drain corn.
  2. Melt butter in medium skillet. Sauté butter, corn, onion, bell peppers until onions are translucent (about 5 minutes). Remove from heat and cool slightly.
  3. Add salt, mayonnaise, cottage cheese and optional sugar. Stir to combine.
  4. Spray baking dish with nonstick spray. Pour mixture and cover with mozzarella. Bake 10 minutes or until melted and bubbly.
  5. Garnish with green onions. Serve with your favorite dippers.
