Ingredients

  • 10 ounce package frozen chopped spinach, thawed and squeezed dry
  • 1 cup Daisy Cottage Cheese
  • 1/3 cup diced red bell pepper
  • 1/3 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 2 large eggs
  • 17.3 ounce package frozen puff pastry sheets, thawed according to package
  • 6 ounces Black Forest Ham, chopped
  • 3/4 cup shredded cheddar cheese

  • 1/3 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 2 large eggs
  • 17.3 ounce package frozen puff pastry sheets, thawed according to package
  • 6 ounces Black Forest Ham, chopped
  • 3/4 cup shredded cheddar cheese

Directions

  1. Heat the oven to 400 degrees. Line a large rimmed baking sheet with parchment paper.
  2. Combine the spinach, cottage cheese, red bell pepper, Parmesan, salt, pepper and nutmeg in a medium bowl. Stir in 1 of the eggs until well-blended.
  3. On a lightly floured surface, roll each puff pastry sheet to 12-inch square. Cut each into 4 squares.
  4. Place the spinach mixture in the center of each pastry square. Top with the ham and Cheddar cheese.
  5. Beat the remaining egg and lightly brush over the edge of each pastry square. Bring the corners of each square to the center and lightly press together. Place on the baking sheet. Lightly brush the top of the pastry with the egg mixture.
  6. Bake for 20 to 25 minutes or until golden brown.
