Ingredients
- 12-15 frozen taquitos, any flavor
- 1 cup black beans, rinsed and drained
- 2 cups enchilada sauce, any flavor
- 2 cups shredded Colby Jack cheese
- 1/2 cup Pico de Gallo
- 1/2 cup Daisy Sour Cream
- 1 jalapeno, sliced
- 1/4 cup chopped cilantro

Directions
- Preheat oven to 400°F and spray a 9x9-inch casserole dish with nonstick spray.
- Place frozen taquitos in a single layer, using as many as you need to fill the bottom. Bake 10 minutes.
- Remove from oven. Sprinkle with beans and cover with enchilada sauce. Top with cheese and bake and additional 15 minutes.
- Top with Pico de Gallo and sour cream. Garnish with jalapenos and cilantro, if desired.
