Ingredients

  • 12-15 frozen taquitos, any flavor
  • 1 cup black beans, rinsed and drained
  • 2 cups enchilada sauce, any flavor
  • 2 cups shredded Colby Jack cheese
  • 1/2 cup Pico de Gallo
  • 1/2 cup Daisy Sour Cream
  • 1 jalapeno, sliced
  • 1/4 cup chopped cilantro

  • 1/2 cup Pico de Gallo
  • 1/2 cup Daisy Sour Cream

Directions

  1. Preheat oven to 400°F and spray a 9x9-inch casserole dish with nonstick spray.
  2. Place frozen taquitos in a single layer, using as many as you need to fill the bottom. Bake 10 minutes.
  3. Remove from oven. Sprinkle with beans and cover with enchilada sauce. Top with cheese and bake and additional 15 minutes.
  4. Top with Pico de Gallo and sour cream. Garnish with jalapenos and cilantro, if desired.
