Directions
- Preheat oven to 350°F. Line large baking sheet with parchment paper.
- Mix almond flour, sugar, cottage cheese, and vanilla until a thick dough forms. If too wet, add a teaspoon of additional almond flour at a time.
- Roll dough into 12, 1 1/2” balls. Place on baking sheet, about 1” apart.
- Bake 20-30 minutes or until golden brown. They should feel slightly firm and should not fall apart with light pressure.
- Let cool on a wire rack 5 minutes. Sprinkle with powdered sugar before serving.
