  1. Preheat oven to 350°F. Line loaf pan with parchment paper.
  2. Mix blended cottage cheese, whole eggs, and baking powder until smooth. Stir into oat flour until just mixed.
  3. Beat egg whites to medium-stiff peaks. Gently fold into oat mixture. Spread evenly into loaf pan. Sprinkle top with oats.
  4. Bake 45 minutes or until a toothpick inserted into center comes out clean. Cool in a pan 30 minutes before removing and slicing.
