Directions
- Preheat oven to 350°F. Line loaf pan with parchment paper.
- Mix blended cottage cheese, whole eggs, and baking powder until smooth. Stir into oat flour until just mixed.
- Beat egg whites to medium-stiff peaks. Gently fold into oat mixture. Spread evenly into loaf pan. Sprinkle top with oats.
- Bake 45 minutes or until a toothpick inserted into center comes out clean. Cool in a pan 30 minutes before removing and slicing.
