I found this recipe by accident just when I had some extra cottage cheese. These are wonderful, moist muffins and I did not find them to be overly sweet. Having recently moved, I couldn't find my zester, so I added about two tablespoons orange juice to the batter. I also added a teaspoon of vanilla and about a 1/2 teaspoon of cinnamon. We also ate them without the glaze. The cranberries were tart and yummy.
Can this be made without flaxseed? If so, what needs to be substituted?
Isn't that a lot of sugar and sodium. I'm diabetic Is there a way to cut that xown
I have always used Daisy sour cream and so I tried the cottage cheese. Another great product. THANK YOU
