Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup Daisy Cottage Cheese
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 3/4 cup hazelnut spread

  • 1/2 cup Daisy Cottage Cheese

  • 1/2 cup buttermilk
  • 1 large egg
  • 3/4 cup hazelnut spread

Directions

  1. Heat the oven to 375 degrees. Line 12 muffin cups with muffin liners.
  2. Whisk the flour, sugar, baking soda, cinnamon, and nutmeg in a large bowl.
  3. Whisk the cottage cheese, butter, buttermilk, and egg in a medium bowl until blended. Stir the cottage cheese mixture into the flour mixture until combined.
  4. Spoon half of the batter into the muffin cups. Top with half of the hazelnut-cocoa spread. Spoon the remaining batter into the muffin cups; top with the remaining hazelnut-cocoa spread.
  5. Swirl gently with a small knife. Bake for 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. Cool in the pan on wire a rack for 5 minutes; remove from the pan. Cool completely.
