Add cottage cheese, honey, and cocoa powder to a food processor and mix until completely smooth. Spread thinly into a small dish. Refrigerate for at least 4 hours.
Scoop chilled filling into balls using a small cookie scoop and place on parchment lined tray. Freeze for 30 minutes.
Melt chocolate chips and coconut oil in the microwave on medium power in 30 second increments until completely melted. Stir between rounds.
Dip frozen balls into melted chocolate and quickly sprinkle with sea salt, if using. Store covered in refrigerator.
