Ingredients

  • 1 pound lean ground beef
  • 3/4 cup taco sauce
  • 15 ounce can black beans, drained and rinsed
  • 14.5 ounce fire-roasted tomatoes
  • 1 cup frozen corn kernels
  • 2 cups frozen onion and bell pepper mix
  • 1 cup beef or chicken broth
  • 3/4 cup Daisy Sour Cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1/2 tomato, chopped

Ingredients

  • 1 cup frozen corn kernels
  • 2 cups frozen onion and bell pepper mix
  • 1 cup beef or chicken broth

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1/2 tomato, chopped

Directions

  1. Cook the ground beef in a 3-quart nonstick saucepan or Dutch oven over medium-high heat 5 to 7 minutes or until thoroughly cooked, stirring frequently; drain.
  2. Stir in the black beans, tomatoes, corn, onion and pepper mix, and chicken broth. Cook for 8 to 10 minutes or until thoroughly heated and the vegetables are tender.
  3. Top each serving with a dollop of sour cream, shredded cheese, diced green onions and chopped tomatoes.
