1 cup Daisy Brand Cottage Cheese

1/3 cup sun-dried tomatoes

1/4 teaspoon Italian seasoning

1 pinch salt

1 pinch pepper

6 7-inch squares egg roll wrappers

1 egg

1 teaspoon water

2 cups marinara sauce
Directions
Filling: Combine the cottage cheese, drained chopped sun-dried tomatoes, and Italian seasoning. Add salt and pepper to taste. Assembly: Cut the egg roll wrappers into 24 - 3.5 inch squares. Portion one teaspoon of the filling onto the center of each square. Prepare the egg wash by beating egg with water. Brush two adjacent edges of each square lightly with egg wash and pull the opposite end of the square over to form a square pocket. Press gently along the edges to secure the filling. Working in batches, boil about six ravioli at a time for 2 minutes, or until tender. Drain and portion into bowls. Heat sauce and serve over ravioli.
