Stuffed Mushrooms

Ingredients

24 large stuffing mushrooms

1/2 pound pork sausage

1 cup chopped onion

1/4 cup chopped bell pepper

1 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1 cup water

3/4 cup instant white rice

1/4 cup parsley

2 cups Daisy Brand Sour Cream

1 1/2 cups shredded Parmesan cheese
Directions
Remove stems from mushrooms and finely chop stems. Brown sausage, onions, pepper and mushroom stems. Add salt, garlic, cayenne pepper and water. Bring mixture to a boil. Add rice and parsley, cover pot and remove from heat. Let stand for 15-20 minutes, until rice in tender. Blend sour cream and Parmesan. Use half of sour cream mixture to combine with sausage mixture. Stuff mushrooms with mixture. Spoon remaining sour cream mixture on top of mushrooms. Bake in casserole dish at 350 degrees for 30 minutes. Mushrooms will be puffy and golden when done. Garnish with parsley.
