Ingredients

  • 3 cups cooked brown rice
  • 2 cups corn kernels
  • 2 cups Daisy Brand Sour Cream
  • 1 teaspoon finely minced jalapeno pepper
  • 8 chopped scallions
  • 2 cups shredded Monterey Jack cheese
  • 1 dash salt & pepper *to taste
  • 1 cups grated sharp Cheddar cheese

Directions

Mix everything, but the Cheddar cheese together and spread into a buttered 1 1/2 quart casserole dish. Top with the Cheddar cheese. Bake at 350 degrees covered for 45 minutes and uncovered for 30 more minutes. Can be prepared and refrigerated to cook later. If prepared ahead of time, increase baking time to 1 hour and 15 minutes covered, and 30 minutes uncovered.
