Ingredients

4 ounce package peach gelatin

1 1/4 cups peach nectar

1 1/4 cups sugar

1 teaspoon vanilla

8 ounces cream cheese

1/2 cup Daisy Brand Sour Cream

12 ounces evaporated milk

1/4 teaspoon peach flavoring

2 ripe peaches
-
1/4 teaspoon almond flavoring

2 teaspoons cornstarch

2 tablespoons water
Directions
Cloud: Chill evaporated milk. Dissolve gelatin in 1 cup boiling peach nectar. Add remaining 3 tablespoons peach nectar and cool to lukewarm. Mix 1 cup of sugar, vanilla, and softened cream cheese. Add sour cream and blend until creamy. Blend 1 tablespoon of the peach mixture into the sour cream mixture. Continue adding small amounts and blending well between each addition until all of the gelatin mixture is blended with the sour cream mixture. Stir in peach flavoring, blending well. Whip chilled evaporated milk in mixer on high until it hold it's shape and volume. Fold whipped milk into peach and sour cream mixture until a soft orange color pervades. Pour into a 2-quart bowl. Chill for at least 4 hours before serving. Top with peach topping. Topping: Peel and mash 1 peach. Add 3 tablespoons sugar, water, and cornstarch. Cook in small saucepan for a few minutes until thickened. Add almond flavoring. Cool. Slice remaining peach and lay it in a pattern on top of the cloud. Spread the peach sauce over the array of peaches.
