Spinach and Cheese Calzones

Ingredients

1 cup warm water
(105 to 115 degrees F)

1 package active dry yeast

1 tablespoon extra virgin olive oil

1 teaspoon salt

1 teaspoon sugar

2 3/4 cups all purpose flour

1 cup Daisy Brand Cottage Cheese

1 cup shredded Mozzarella cheese

1 10 ounce package frozen loose leaf chopped spinach, thawed and drained

1/2 cup chopped red onion
-
1/2 cup chopped red bell pepper

1/4 cup shredded Parmesan cheese

1 egg
-
1/2 teaspoon minced garlic

2 tablespoons fat free half and half

2 cups marinara sauce
Directions
In a large bowl place the water, yeast, olive oil, salt and sugar. Mix well. Add the flour; mix until dough forms. Let rest 10 minutes. On a well floured board, turn out the dough and knead until the top is smooth (about 30 turns). Place the dough in a greased bowl, cover, and let rise for 1 ½ hours or until it doubles in size. Meanwhile, drain the cottage cheese well. Stir together the cottage cheese, Mozzarella cheese, spinach, red onion, red bell pepper, Parmesan cheese, egg, and garlic in a medium bowl; set aside. Once the dough has risen, punch down and separate into either 6 or 8 pieces. Let rest 5 minutes. On a well floured board, pat each dough piece into a 6-inch disk, being careful not to tear the center. Place about 1/3 cup filling in the center of each dough circle. Fold over the top of the dough and pinch the edges to seal. Brush the tops of the calzones with the half and half. Bake the calzones for 23 to 25 minutes at 400 degrees or until the calzones are golden brown. Serve with the marinara sauce.
