Creamy Potato and Cheese Casserole

Ingredients

5 large potatoes, cleaned, drained, and cut into 1 1/2 inch cubes

2 cups Daisy Brand Sour Cream

2 cups Colby Jack cheese, shredded

3/4 cup milk

1/2 cup bacon, cooked and crumbled

1/3 cup fresh chives, snipped

1/2 teaspoon salt

1/4 teaspoon cracked black pepper
Directions
Heat the oven to 400 F. Place the potato cubes in a 4-quart saucepan and cover with water. Bring to a boil over high heat. Reduce the heat and continue cooking over medium heat until the potatoes are fork tender (about 10 to 12 minutes). Drain the potatoes well. In a large bowl, mash the potatoes with hand masher until fairly smooth. Add the remaining ingredients and mix well. Turn the potato mixture into a greased 2-quart casserole. Cover the potatoes with a lid or aluminum foil. Bake the potatoes for 50 to 55 minutes or until heated through.
