Cottage Cheese, Egg, and Ham Muffins

1/4 cup milk

1/4 teaspoon salt

1/3 cup vegetable oil

1 1/2 cups all purpose flour

3 teaspoons baking powder

3/4 cup Daisy Brand 4% Cottage Cheese

1/4 cup sliced green onions

1/2 cup shredded cheddar cheese

2 lightly beaten eggs

1/2 cup finely chopped ham
Directions
Mix flour, baking powder and salt in large bowl; set aside. Mix the cottage cheese, eggs, oil and milk in another large bowl. Fold in the ham, Cheddar cheese and green onions. Stir into dry ingredients until moistened. Spray 12 nonstick muffin cups well with non-stick spray. Fill 2/3 full with batter. Bake in a preheated 375F oven 20 to 25 minutes or until they are golden brown on top and toothpick inserted in center comes out clean.
