Ingredients

  • 4 cups uncooked penne pasta
  • 1 1/2 pounds ground beef
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1 small chopped onion
  • 1/4 cup chopped green pepper
  • 1 4 ounce can drained mushrooms
  • 1 15 ounce can tomato sauce with Italian herbs
  • 1 14.4 ounce can diced tomatoes, drained
  • 1 cup Daisy Brand 4% Cottage Cheese
  • 8 ounces sliced Swiss cheese

Directions

Cook pasta in salted water according to package directions and drain. Meanwhile, in a medium skillet cook ground beef until no longer pink; sprinkle with flour and salt. Add chopped onion, green pepper and mushrooms. Cook for an additional 2 minutes. Remove from heat. Add tomato sauce, drained tomatoes, and cottage cheese. Combine with drained pasta. Pour into a 9x13 inch (3-quart) baking dish that has been sprayed with cooking spray. Top with sliced Swiss cheese. Bake the casserole at 350 degrees for 25 to 30 minutes or until cheese has melted and started to brown.
