Ingredients

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup Daisy Brand 2% Cottage Cheese
  • 1 beaten egg
  • 1/4 cup vegetable oil
  • 1 cup frozen broccoli, thawed and patted dry
  • 2 tablespoons minced onion

Directions

Mix flour, cornmeal, sugar, baking powder and salt in a large bowl. Make a well in the middle of the dry ingredients. Add milk, cottage cheese, beaten egg, and vegetable oil. Stir to incorporate ingredients. Fold thawed chopped broccoli and minced onion into mixture. Bake in an 8 or 9-inch square pan sprayed with non-stick spray in a 375 degree oven for 30 to 35 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes.
