Ingredients

  • 2 baking potatoes
  • 1 tablespoon olive oil
  • 1/2 cup Daisy Brand 2% Cottage Cheese
  • 1/2 cup Daisy Brand Sour Cream
  • 1/8 cup sliced green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded Cheddar cheese
  • 2 strips diced cooked turkey bacon

Directions

Thoroughly clean potatoes. Rub each with olive oil. Bake on a cookie sheet at 450 degrees for an hour or until tender when pressed. Remove potatoes from oven and cool 15 minutes or until comfortably handled. Cut each potato length-wise. Scoop out the middle of the potato leaving about ¼ inch of potato in skins, taking care not to break skins. In a bowl mix potato whites, cottage cheese, sour cream, diced green onions, salt and pepper. Scoop ¼ of the potato mixture back into each potato boat. Sprinkle with Cheddar cheese and diced bacon. Bake the potatoes at 450 for an additional 10-15 minutes or until cheese has melted.
