Old Fashioned Macaroni and Cheese

Ingredients

  • 2 cups dried elbow macaroni
  • 1 cup Daisy Brand 4% Cottage Cheese
  • 1 cup whipping cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cracked black pepper
  • 2 tablespoons butter
  • 1/2 cups bread crumbs
  • 1/4 cup shredded Parmesan cheese

Directions

Cook macaroni according to directions on box, drain, and set aside. Heat oven to 400 F. Spray 2-quart casserole dish with non-stick cooking spray; set aside. In small food processor bowl, place cottage cheese. Process the mixture at high speed for 30 to 60 seconds or until creamy. In 4-quart saucepan over medium heat, bring whipping cream to a low boil. Add creamed cottage cheese. Using wire whisk, stir until cottage cheese is mixed into cream (1 minute). Remove from heat. Stir in remaining sauce ingredients until cheeses melt (2 to 3 minutes). Add cooked macaroni to cheese sauce. Spoon the pasta into prepared casserole dish and cover. Bake for 20 to 25 minutes or until pasta is hot. Remove cover. Meanwhile, in small skillet, over medium heat, melt butter. Add bread crumbs. Cook, stirring frequently, for 1 to 2 minutes until bread crumbs become light brown. Remove from heat. Stir in Parmesan cheese; set aside. Sprinkle top of macaroni and cheese with breadcrumb mixture. Return to oven for 5 more minutes or until Parmesan cheese melts and is golden brown.
