Ingredients

  • 3/4 cup brown sugar packed
  • 1/2 cup honey
  • 1/3 cup softened butter
  • 4 large eggs
  • 1/2 cup Daisy Brand 4% Cottage Cheese
  • 3 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon allspice
  • 1/2 cup cooled strong coffee
  • 1 cup diced peeled apple

Directions

Heat the oven to 350°F. With cooking spray, spray bottom only of 13x9-inch baking pan. Beat brown sugar, honey and butter in large bowl on medium speed until light and fluffy. Add eggs and cottage cheese; beat until creamy, scraping bowl if necessary. Add flour, cinnamon, baking powder, salt, baking soda and allspice; beat on low speed until mixed. Beat on medium speed until creamy. Beat in coffee at low speed until creamy. Fold in diced apple. Pour into pan. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. If desired, top individual pieces with apple slices and drizzle with honey. Serve with additional sliced apples and honey, if desired.
