Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 2/3 cup butter cold, cut into slices
  • 1 3/4 cups Daisy Brand 4% Cottage Cheese
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon almond extract
  • 1 thinly sliced nectarine
  • 1/2 cup sliced almonds

Directions

Heat the oven to 350°F (325°F for dark pan). Grease and flour the bottom and sides of 9-inch spring-form pan. Mix flour and 1/2 cup sugar in large bowl; with cut in butter with pastry cutter, or mix on low speed with electric mixer until mixture resembles coarse crumbs. Reserve 1/2 cup of mixture. Place 3/4 cup cottage cheese and 1 egg in food processor; process until smooth. Add to flour mixture in large bowl along with baking powder; mix on low speed until mixture holds together. Press or spread in bottom and 2 inches up sides of pan. Place 1 cup cottage cheese, 1/4 cup sugar, 1 egg, and almond extract in same food processor bowl; process until mixed. Pour over crust. Place nectarines over filling in single layer. In small bowl, mix almonds with reserved flour mixture; sprinkle over nectarines. Bake 40 to 50 minutes or until filling is set and crust is golden brown. Cool 30 minutes. Serve warm or cool.
