Ingredients

  • 2 medium fresh ripe tomatoes
  • 4 teaspoons basil pesto
  • 1 dash nonstick cooking spray
  • 1 cup Daisy Brand 2% Cottage Cheese
  • 1 teaspoon toasted pine nuts
  • 1/2 cup grated Parmesan cheese
  • 4 dashes cracked black pepper
  • 4 sprigs fresh parsley

Directions

Pre-heat conventional oven to 350º. Remove the core of the tomato and slice in half horizontally then nip off the ends so it lays flat. Spread a teaspoon of pesto on each tomato half. Spray a small cookie sheet with non-stick cooking spray and lay tomato halves on the cookie sheet (seed side facing up), placing on the center rack of the pre-heated oven. Bake for 12 minutes. Remove tomatoes from oven and top each half with a ¼ cup of cottage cheese, ¼ teaspoon of toasted pine nuts, 1/8 cup of Parmesan cheese, and a dash of fresh cracked black pepper. Top with a parsley sprig and serve.
