Ingredients

  • 2 tablespoons butter
  • 2 eggs
  • 1/2 cup 2% milk
  • 1/2 cup all purpose flour
  • 1 1/2 cups Daisy Brand 4% Cottage Cheese
  • 1 tablespoon powdered sugar
  • 1 cup mixed fresh berries such as strawberries, blueberries, and blackberries

Directions

Heat the oven to 425°F. Place butter in 9-inch glass pie plate. Place in heated oven until melted; remove from oven. Meanwhile, whisk or beat eggs, milk and flour in medium bowl until smooth. When oven is at temperature, pour batter over melted butter. Bake 15 to 20 minutes or until puffed and golden brown. While the pancake is baking, mix the cottage cheese and powdered sugar in a small microwavable bowl. Microwave on High 1 to 1 1/2 minutes or until warm. Spoon over puff pancake as soon as it is out of the oven; top with berries. If desired, sift powdered sugar over berries. Cut in wedges; serve immediately.
