Ingredients

1/2 pound fresh green beans

1 bell pepper

2 medium tomatoes

4 cups Romaine lettuce

4 cups fresh spinach

1/4 cup black olives
-
2 cups Daisy Brand 2% Cottage Cheese
Directions
Blanch green beans, drain, and rinse. Slice bell pepper into long thin strips. Slice tomatoes. Combine lettuce, spinach, tomatoes, bell pepper, olives, and green beans; portion onto 4 plates. Top each with 1/2 cup of cottage cheese and serve. *Optional - For a moister salad try adding 4 tablespoons of vinaigrette.
