Ingredients

  • 2 cups jicama
  • 1/3 cup red onion
  • 1 cup carrots
  • 1/3 cup red bell pepper
  • 1/3 cup green bell pepper
  • 1/8 cup jalapeno pepper
  • 1 tablespoon chili pepper
  • 7/8 cup Daisy Brand Sour Cream
  • 2 tablespoons lime juice
  • 1 tablespoon vinegar
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon onion powder
  • 1/4 cup chopped cilantro
  • 2 pinch salt
  • 1/8 teaspoon pepper

Directions

Julienne jicama, onion, carrots, and bell peppers to 1/8 inch pieces. Seed and mince jalapeno and chili peppers. Combine sour cream, lime juice, vinegar, ground cumin, onion powder, and cilantro in a mixing bowl and mix thoroughly. In a second bowl toss all other ingredients together and add sour cream mixture. Mix well until vegetables are evenly coated. Adjust seasoning with salt and pepper.
