Ingredients

4 pieces thick sliced whole grain bread

1 cup Daisy Brand Cottage Cheese

1 large tomato

1/2 pound fresh mozzarella

16 fresh basil leaves

2 tablespoons olive oil

1 dash salt and pepper to taste
Directions
Spread ¼ cup of cottage cheese onto each piece of bread. Slice the tomato into 4 thick slices and place on top of cottage cheese. Top with sliced fresh mozzarella and fresh basil leaves. Drizzle with olive oil. Salt and pepper the sandwiches to taste.
