4 ounces crumbled tomato and basil seasoned Feta cheese

2/3 cup Daisy Brand Sour Cream

1/3 cup chopped black olives

1/3 cup chopped Roma tomatoes

1/2 cup frozen chopped spinach

1/2 cup coarsely crushed Caesar croutons

4 tablespoons Greek vinaigrette salad dressing

2 pound boneless pork loin
-
1 butcher string to tie
-
1/4 cup water

1 can cooking spray
Directions
Preheat oven to 375 degrees. Spray small roasting pan with non-stick spray. To prepare stuffing, add crumbled tomato and basil seasoned Feta cheese, sour cream, black olives, drained Roma tomatoes, drained spinach, Caesar croutons and 1 tablespoon of salad dressing into a medium sized bowl. Stir until well blended. To prepare meat, butterfly the pork loin; press out to reach 1/2 to 5/8-inch thickness. Pour 1 tablespoon salad dressing onto meat, spread evenly. Spread stuffing evenly over meat, leaving a 1 inch border from the edges. Roll up like a jellyroll and tie securely. Place in roasting pan. Pour 1 tablespoon of salad dressing onto outside of pork, spread evenly by rubbing. Roast for 30 minutes. Add water and last 1 tablespoon of salad dressing. Baste pork with pan juices. Roast an additional 30 minutes. Remove from pan and let rest 15-20 minutes. Slice and serve.
