Ingredients

  • 6 whole wheat tortillas
  • 2 cups Daisy Brand Cottage Cheese
  • 2 cups packed baby spinach
  • 2 cans black beans, rinsed and drained
  • 2 cups tomatillo sauce
  • 1/2 cup shredded reduced fat Mexican cheese blend

Directions

Preheat the oven to 350 degrees. Spray an 8 1/2 x 11 inch pan with nonstick spray. Tear 3 tortillas into chunks and place in the bottom of the pan. Drain the excess liquid from the cottage cheese and spread onto the tortilla layer. Add the spinach and then add the black beans. Tear the remaining 3 tortillas into chunks and place on top of the beans. Top with tomatillo sauce and shredded cheese. Bake for 20 minutes.
