Ingredients

  • 1 apple
  • 1 teaspoon cinnamon
  • 2 teaspoons Splenda
  • 1 teaspoon vegetable oil
  • 2 tablespoons lite maple syrup
  • 6 3 1/2" diameter Frozen whole wheat pancakes
  • 1 cup Daisy Brand 4% Cottage Cheese
  • 2 sprigs fresh mint *Optional

Directions

Peel, core, and cube apple. Combine apples, cinnamon, and Splenda. In a small pan heat oil and sauté apple mixture for 2 minutes. Add 2 tablespoons of lite maple syrup to the mixture and cook an additional minute. Fold mixture into cottage cheese until just mixed. Heat pancakes per package instructions. Place one pancake on a plate and top with 1/6 of cottage cheese mixture. Repeat to form three layers on each plate. Top with a sprig of fresh mint and a drizzle of maple syrup, if desired.
