Ingredients

  • 1 cup yellow cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup Daisy Brand Light Sour Cream
  • 2 large eggs
  • 1/4 cup butter, melted

Directions

Grease a 12 muffin tin well and preheat the oven to 425 degrees. In a large bowl, combine yellow cornmeal, flour, sugar, baking powder, salt, and baking soda; set aside. In a separate large bowl combine the light sour cream, eggs, and butter. Add the dry ingredients to the wet ones; stir until moist. Spoon the batter into muffin tins and bake for 15-20 minutes or until golden brown.
