Ingredients

2 cups chopped fresh mushrooms

2 tablespoons vegetable oil

3 cups chopped fresh spinach

2 tablespoons minced fresh thyme

1/2 teaspoon minced shallots

2 teaspoons kosher salt
plus extra for sprinkling

1/4 cup bacon crumbles

1 cup blue cheese
-
1 cup Daisy Brand 4% Cottage Cheese

1 cup bread crumbs

12 split chicken breasts
bone in with skin

2 tablespoons olive oil
-
2 teaspoons black pepper
Directions
Preheat oven to 325 degrees. Chop mushrooms and sauté mushrooms in vegetable oil. Drain mushroom liquid, return to heat and add spinach, minced shallots and thyme leaves; sauté the vegetables for an additional 3 minutes. Add 2 teaspoons kosher salt, cooked crumbled bacon, blue cheese, drained cottage cheese and bread crumbs. Stir. Loosen chicken skin from breast meat but do not remove. Stuff the filling between skin and breast meat for each. Rub skin with olive oil and sprinkle with kosher salt and ground black pepper. Bake at 325 degrees for approximately 1 hour or until internal temperature reaches 160 degrees.
