Grilled Mediterranean Pitas

Ingredients

1 cup Daisy Brand Sour Cream

1/2 cup lowfat plain yogurt

1 medium cucumber

1 clove minced garlic
-
1 1/2 medium onions

1/4 teaspoon salt

3 assorted bell peppers

1/2 cup olive oil
-
1/2 teaspoon oregano
-
1/2 cup cooked rice
-
1 pinch salt & pepper

6 6-inch pockets pita bread
Directions
Mix together the sour cream and yogurt. Combine the diced cucumber, garlic, and 1/2 diced onion in a separate bowl. Add the cucumber mixture to the sour cream mixture, sprinkle with ¼ teaspoon salt, and refrigerate 1 hour. Cut the bell peppers and 1 onion into 1 inch pieces and place in a bowl. Mix the olive oil and oregano together. Season the mixture with salt and pepper, to taste. Mix the vegetables with the oil. Grill the vegetables on wooden skewers over a medium grill for 10 minutes or under the broiler for 3 minutes. Combine the vegetables, cooked rice, and cucumber sauce. Serve in pita bread. *Optional: Try serving with grilled chicken, if desired.
