Ingredients

  • 2 unbaked 9" deep dish pastry shells
  • 1 pound ground turkey
  • 1/2 pound smoked turkey sausage
  • 1 chopped green pepper
  • 4 cloves minced garlic
  • 1 1/2 cups water
  • 1 chopped sweet pepper (yellow or red)
  • 2 cans tomato paste
  • 3 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup Daisy Brand Light Sour Cream
  • 2 bunches cooked spinach
  • 2 chopped tomatoes
  • 1 1/2 cups shredded Mozzarella cheese
  • 1 green bell pepper , sliced in rings

Directions

Line pastry shells with a double thickness of foil. Bake at 450 degrees for 8 minutes. Remove foil. Bake 4 minutes more. Set aside. In a large skillet, cook ground turkey, diced turkey sausage, peppers and garlic until turkey is cooked and vegetables are tender. Drain off excess fat. Stir in water, tomato paste, Italian seasoning and salt. Heat to boiling; reduce heat and simmer, covered for 10 minutes. Meanwhile, in a medium bowl, stir together ricotta cheese, sour cream, drained spinach and 1/2 cup of mozzarella cheese. Spoon the spinach filling into the baked pie shells. Top with meat mixture. Cover edge of pie shell only with foil to prevent over browning. Bake in 350 degree oven for 45 minutes. Remove foil. Top with tomato and remaining cup of mozzarella cheese. Bake 2 minutes more or until heated through and cheese is melted. Let stand 10 minutes before serving.
